Fall is the perfect time to make family memories over a nice, hot, bowl of soup, especially when we’re camping!
We’ve planned a Labor Day camping trip for 4 days, and this chili recipe is absolutely perfect for the trip. Whether I have time to make it over a campfire, or break down and use the crockpot, it’s delicious either way, as well as easy to prep, prepare, and fill everyone up!
I actually got the original recipe for this chili from my youth pastor’s wife in junior high. She made it for a movie night, and not liking chili, I ate it to be polite.
And then was blown away by how delicious it was!
Until then, I had never had chili I’d liked (sorry, Mom!) but even though this didn’t look that appetizing it tasted amazing!
Since then, I’ve made a few changes to make it easier to prepare, and adapted it for the slow cooker, but the basics are the same. My husband has even learned to make it, and anytime a fellowship dinner, social event, or cookout calls for chili, this recipe is our go to.
Each and every time, people comment that it doesn’t look that great but once they taste it, they’re sold!

- 1 lb Ground Beef
- 1 large Onion
- 1 large Green Pepper
- 1 can Corn
- 2 cans Black Beans
- 1 large can Pinto Beans
- 1 can Kidney Beans
- 2 cans Tomatoes with Chiles
- 1 packet Chili Seasoning Mix
- 1 packet Ranch Dressing Mix
- 1 cup Water
- Salt and Pepper, to taste

- Brown the ground beef with the chopped onion in a skillet.
- Add the ground beef, plus the rest of the ingredients to a stock pot or slow cooker. If you're cooking in a stockpot, simmer for 1 hour. If using a slow cooker, 4 hours on low should do the trick. Top with cheese, sour cream, and guacamole for the perfect finish!
